Brazilian Chocolate Fudge Balls.
Ingredients
- 1 tin (395g / 14 oz) Sweetened Condensed Milk
- 4 tbsp Cocoa powder (unsweetened 100% or Dutch-processed)
- 2 tbsp Unsalted butter
- 1 cup Chocolate sprinkles (Granulado)
- Butter for greasing hands
Method
- Cook FudgeIn a small non-stick saucepan, combine condensed milk, cocoa powder, and butter. Cook over low heat, stirring continuously with a silicone spatula.
- Check Point (*Ponto de Brigadeiro*)After 12–15 minutes, the mixture will thicken. It is ready when you drag the spatula across the bottom and it leaves a clean trail showing the pan bottom for 3 seconds (ponto de Moisés).
- CoolPour onto a greased plate and let cool completely (refrigerate 1 hr).
- Roll & CoatGrease hands with butter. Scoop tablespoon-sized portions, roll into smooth balls, and roll in chocolate sprinkles. Place in small paper candy cups.

About 10 minutes of prep and 1 hour 15 minutes of cooking — 1 hour 25 minutes total, yielding 25 pieces.
Why are my brigadeiros grainy?
The condensed milk cooked past the point — once the mixture masses and pulls from the pan, stop. Cook it in a heavy pan over medium-low, stirring constantly, and pull it a moment early.
Butter or no butter in the rolling?
A thin film of butter on your hands, not in the dough, keeps them from sticking. Chill the mixture at least an hour before rolling.
