Doce de leite caseiro is the oldest trick in the Brazilian pantry: a can of condensed milk, transformed into caramel in its own tin. The pressure cooker version turned a risky stovetop ritual into a safe 40-minute certainty.
Ingredients
- 1 can (395 g) sweetened condensed milk, unopened, label removed
- Water, to cover by 5 cm
- 1 pinch fine sea salt, to finish (optional)
Method
- Submerge the canSet the unopened can on its side in the pressure cooker and cover with water by at least 5 cm — the can must stay submerged and never touch the pot base directly (a trivet or folded cloth underneath).
- Pressure 40 minutesBring to high pressure and cook 40 minutes for a spreadable doce de leite (50 for a firmer, sliceable one).
- Cool completelyRelease the pressure naturally, then leave the can in the water until fully cool — opening a hot can throws boiling caramel. This is the safety step; do not skip it.
- Open and useOpen the cold can, stir with the pinch of salt, and keep refrigerated in a jar. Spread on toast, ripple into ice cream, or fill cakes.
