Questions

How long does Esfiha take?

About 1 hour 37 minutes of prep and 9 minutes of cooking — 1 hour 46 minutes total, yielding 16 open sfihas.

Open or closed — which is the real esfiha?

Both: the open-faced flatbread is the Lebanese original and the street favorite in Brazil; the sealed folded version is the bakery snack. Same dough, same spiced filling.

Can the dough rise overnight?

Yes — a slow cold rise in the refrigerator overnight improves the flavor. Bring back to room temperature before shaping.
