Pão Doce de CocoCoconut Buns
A bakery staple that sees high shareability among baking enthusiasts.
Pão Doce de Coco consists of soft, enriched yeast-risen rolls baked together in a tray and finished with a sweet coconut milk glaze. Proper yeast fermentation yields a light, airy crumb. Pouring the warm coconut glaze over hot, freshly baked rolls allows the sweet liquid to soak into the bread, keeping it moist and tender.

Questions
How long does Pão Doce de Coco take?
about 30 minutes of prep — yielding several servings.
What is the coconut filling made of?
Sweetened shredded coconut cooked briefly with sugar and sometimes a little butter or condensed milk into a sticky, fragrant paste rolled into the dough.
Can I use desiccated coconut instead of fresh?
Yes — desiccated coconut softened in a little warm milk or coconut milk comes close. Fresh grated coconut gives a juicier filling when you can get it.
