A Stain of Coffee in Hot Milk — the Counter Breakfast.
Pingado is how São Paulo's café counters learned to say breakfast: a cup of hot milk with a drip of coffee dropped in — the inverse of a café com leite, and defended as such. It is a two-ingredient identity, ordered by name across the city every morning.
Ingredients
- 200 ml whole milk
- 30 to 50 ml strong hot coffee (from a fresh cafezinho pot)
- 1 tsp sugar, to preference
Method
- Heat the milkHeat the milk to steaming, not boiling — a skin forming at the edge is the right moment.
- Coffee into milkPour the milk into the cup first, then add the coffee — pingado means 'dripped': the coffee is a stain dropped into the milk, not the reverse.
- Sweeten and serveSweeten to taste and serve immediately with a fresh pão na chapa or a plain roll.
